It all started in the 1930s when Giovanni Torello, originally from Nizza Monferrato, bought the Castello di Grillano with its historic cellars, vineyards and two farmhouses "Carlotta" and "Rivarola". This is Francesco's grandfather, the current owner, the last descendant of the Marquis Rovereto family, Genoese patricians.
With the abandonment of the old factors, Francesco's father Paolo begins to take care of the vineyards himself, abandoning the industrial activities undertaken by the family in Genoa. The young Francesco, a globetrotter engineer, occasionally helps him during the summer holidays but in 2003 he decides to follow in his footsteps, dedicating himself with passion and entrepreneurial spirit to the wine business. Thus began an extensive renovation of the vineyard and arrangement of the cellars, the buildings were restored and modernized and the inn was built by restoring an old farmhouse. The next generation ─ Filippo, a young director, and Federica with a degree in marketing and communication ─ as young as he is, helps and shares the great dream of the Castello di Grillano started by his great-grandparents almost a century ago.
The "Castello di Grillano" brand takes its name from the homonymous village two kilometers from Ovada, a historic town in Monferrato founded by the ancient Romans at the confluence of the Orba and Stura rivers, 34 km from Alessandria and 20 minutes by highway from the sea of Genoa of which he followed the historical vicissitudes from the Maritime Republic up to the Risorgimento and the Unification of Italy.

At the end of 2008 he started the conversion of cultivation and winemaking methods to organic agriculture, in 2012 obtaining the prestigious certification according to the strict European legislation.
In 2013, a photovoltaic system for the production of electricity entered into production, which almost entirely meets the needs of the company by exploiting solar energy.
Likewise, solar energy is used for the production of domestic hot water for both family use and for guests of the Guest House.

THE WINE>
Castello di Grillano has been producing organic wines since 2012 by carefully applying all the cultivation, processing and bottling rules provided for by the European specification, obtaining certification from ICEA (Institute for Ethical and Environmental Certification). In the vineyard it not only avoids the use of synthetic pesticides, herbicides and "chemical" fertilizers, but also preserves the fertility of the soil thanks to appropriate processes and green fertilizers (green manure), in accordance with the rhythms of nature. The soil is thus revitalized. The vineyard is managed in a balanced way with pruning respecting the physiology of the plant, careful management of the foliage (green pruning and defoliation), scrupulous control of the health status of the grapes, and, above all, with the containment of production (thinning bunches). These operations, performed strictly by hand by expert vintners, allow you to obtain a grape, hand-harvested in small boxes, of high quality and sincere expression of the terroir. The wines, produced according to nature and with a professional wisdom that has its roots in time are an emblem of good food and bien vivre and sincere expression of the terroir. The production process excludes the use of sulfur dioxide and any other potentially allergenic substance.
Attention to the environment and health is not limited to organic agriculture but also to the use of renewable energies. Since the 2015 vintage, the wines of Castello di Grillano have also received the Bio Vegan certification from the ICEA of Bologna which, after a long procedural process, has defined a very precise specification that provides for the elimination of all substances of animal origin in the processing of wine. These wines are therefore also indicated in a vegan diet.
For the Castello di Grillano, vegan wine was a natural evolution in the application of the rigorous principles of organic agriculture. With the experience gained over years of experimentation Castello di Grillano has developed a winemaking protocol by eliminating from the wine production process not only the use of sulfur dioxide but also any substance of animal origin, keeping the quality, the stability and goodness of wine.
